This recipe is naturally vegetarian, as well as gluten free. If you have an allergy, make sure to use oats marked gluten free to avoid cross-contamination. For a vegan option, use plant based milk and skip the eggs, or use a vegan egg replacement.

You'll need a small bowl to lightly beat the egg, a large bowl to mix the oatmeal ingredients together, and an 8 x 8-inch square pan for baking. I used my favorite Emile Henry Square Baker ... it's easy to clean and looks so beautiful on the table!

Wasn't that easy? If you're a fan of the juicy summer fruit, this easy Peach Baked Oatmeal is sure to become on of your favorite morning recipes!

You can serve these oats as-is or add a few toppings. I like mine topped with Greek yogurt and more fresh fruit (if I have it) for an amazing Peaches and Cream flavor, but you'll find more serving suggestions below.

Once you've mastered the basic recipe, you can start experimenting! Here are a few ideas to inspire you:

This Baked Peach Oatmeal has a different consistency than regular oatmeal, as you can probably tell from the photos! Unlike the creamy porridge you get when cooking oats on the stove, this breakfast casserole has more of a firm, bread pudding-like texture.

The oats are delicious served as-is, or you can top them with yogurt, sliced peaches, and a sprinkle of cinnamon. Many people also enjoy them with milk. This recipe is lightly sweetened. If you prefer a sweeter breakfast, simply sprinkle a little brown sugar over the top or drizzle the oats with maple syrup before eating. Yum!

Peach Baked Oats are one of the best make ahead breakfasts! And they're great for meal prep, too ... make the recipe on Sunday, then enjoy a quick morning meal all week long.

To store, refrigerate leftovers in an airtight container. They'll stay fresh for three to four days, and you can reheat the oats gently in your microwave before eating. You can also freeze leftovers for one to two months. I like to wrap individual portions separately, them store them portions in a larger airtight, freezer-safe container. That way, you can easily remove a single serving.
