Easy Egg Casserole: A Healthy & Easy Summer Meal Prep Option

It’s that time of year when some of us end up with more veggies in our gardens than we know what to do with. How about adding them to eggs to make a healthy egg casserole? It’s a great option for a quick make-ahead breakfast, brunch or dinner for the warm summer months.

Preparation is simple. Fry some diced veggies (e.g. 2 small zucchinis or red peppers) and some diced onion in olive oil, stirring often, until tender. Meanwhile, whisk 8 Ontario farm fresh eggs, 1 cup of milk and some salt in a large bowl. Stir in the cooked veggies, onion and ¼ cup of parmesan. Pour into a greased square baking dish. Sprinkle with more parmesan. Bake at 350 degrees for 45 minutes, and voila, meal prep is done!
